In an effort to use up surplus tomatoes from the glasshouses at Ballymaloe, Myrtle Allen started making Ballymaloe Country Relish in the 1960′s. It was so popular amongst the Allen family that her daughter, Yasmin Hyde, thought others might like it too. She started making it at her home in 1990 and now makes it in purposely designed kitchens in Little Island, Co. Cork.
