What you need:
Serves 3-4
4 handfuls of rocket
16-20 cherry tomatoes
Ballymaloe Italian Dressing
Olives
200g feta cheese, cubed
What to do:
Divide the rocket leaves between 4 plates or 1 large serving dish. Cut the cherry tomatoes in half and drizzle with Ballymaloe Italian Dressing. Place the tomatoes on the rocket and sprinkle on the cubes of feta. Serve immediately.
